Beef Stroganoff
Lean beef, low sodium broth, and whole wheat noodles make this a delicious, heart-healthy meal!
Ingredients
- uncooked whole wheat noodles 8 oz
- olive oil 1 tsp
- ground beef, extra lean 1 lb
- chopped onion 1 cup
- minced garlic (fresh or bottle) 1 tsp
- cremini mushrooms, sliced 1 (8oz) package
- all-purpose flour 2 Tbsp
- fat-free, less sodium beef broth 1 cup
- salt 1/4 tsp
- pepper 1/8 tsp
- reduced-fat sour cream 1 cup
- dry sherry 1 Tbsp
- fresh parsley ( 1 1⁄2 tsp dried parsley) 3 Tbsp

Servings
6 servings (serving size: 1/2 cup stroganoff, 2/3 cup pasta, and 1 1⁄2 tsp parsley)

Directions
- Cook pasta according to package directions, omitting salt and fat. Drain and rinse under cold water; drain.
- Heat oil in a large skillet over medium-high heat; add beef and cook about 5 minutes or until browned stirring to crumble.
- Add onion, garlic, and mushrooms to pan; cook 4 minutes stirring frequently.
- Sprinkle with flour; cook 1 minute stirring constantly.
- Stir in broth and bring to a boil.
- Reduce heat and simmer 1-2 minutes or until slightly thick. Add salt and pepper.
- Remove from heat and stir in sour cream and sherry. Serve over pasta and sprinkle with parsley.

This recipe is also very good with strips of sirloin steak instead of ground beef.
